Lines of Research:
Food bioprocesses and microbiology: It focuses on the study of biotechnological processes in the production of bioproducts, using yeasts and microalgae. In this line of research are also inserted the studies on the microbial process in food concerning the microbial behavior, and its relation to the feeding matrix; studies involving the One-health issue; studies on probiotical microorganisms with potential to be employed at the food bio-conservation.
Science and Technology of plant products: It involves research focused on the physical, chemical, physical-chemical, and biochemical properties of the fruits and plants, aiming to utilize them in natura or in the industry as well as their behavior after harvest.
Science and technology of animal products: It covers studies on the constituents of dairy, meat, fish, honey, and derived products, besides processing and development techniques for new products.
