RESUMO: Beer is the most widely consumed and well-known beverage in the world. It was discovered thousands of years ago and its production has been perfected over time, to the present day with several styles of beer that use the most diverse inputs. Although beer is present all over the globe, studies on the beverage and its market are still very limited and have strong regional influence. To achieve competitive sustainability for a product of this level of globalization, entrepreneurs in the field need to refine their innovation strategies and understand the market from the perspective of their consumers. So by adding value to their company and the development of their product, beers that meet the real needs of potential consumers, and avoiding unnecessary costs. Aiming to understand the functioning of the innovation strategies of microbreweries and the behavior of consumers in this market considering the northeast region, the first part of this work studied these objectives in two articles. The craft beer with antioxidant properties is the goal for the third and final job. In this article, the production of a craft beer with the addition of a regional fruit is analyzed to add the functional antioxidant property, in addition to giving the drink unique sensory characteristics, the work also presents a regional analysis on craft breweries on the theme of innovation. For this, the first two works were essential, for the definition of innovation strategies for the development of the project and for the understanding of the needs of the customers that need to be met, these needs are directly linked to the technical requirements of the production process of the new beer.
