RESUMO: Coatings are low cost and feasible technologies to maintain the quality of stored fruits and vegetables and reduce postharvest losses. They are a thin layer blocking pores and lenticels on the fruit surfaces, acting as a barrier to moisture, O2, and CO2 exchanges, modifying internal gas concentrations, reducing product metabolic activity and delaying senescence. This work was aimed at describing the effects of cassava starch-based coatings on blocking pores, changing internal atmosphere composition and preserving qualities of coated fruits. Four experimental approaches with different objectives were carried out: I – to propose an alternative method for the estimation of blocked pores on the surface of freshly coated produce using Digital Image Processing and to quantitatively assess the impact of coating properties on blocking pores of different fruits; II – to describe the relationship between starch-based coating and the internal oxygen concentration in coated banana; III – to investigate the dynamic behaviour gases exchange and internal atmosphere build up in starch-based solution coated papaya fruit; IV – to evaluate the effects of starch-based coating with ascorbic acid/choline chloride Deep Eutectic Solvent (DES) as a plasticizer on postharvest quality of mango fruit. The proposed method for estimating the blocked pores on coated fruit surface uses stained starch granules-color to segment coated fruit images and to extract the patterns. Coating solution without Tween, as well as the one receiving Tween when it was at 60 °C, had weak interaction with the skin of fruits known to have high cutin and wax content (mandarins and peppers) but had great adhesion onto the banana surface.
